Amidst all the foodie horror stories and the family van vat-ing leftover barbecue sauce, it seemed like a bit of a time-wasting, industry-changing number. Last year, the USDA said that Americans spent $1.34 trillion on food, an amount greater than the gross national product of the entire planet in 1973. Around the same time, during a keynote speech at the International Water Conference in Cape Town, South Africa, more than a decade ago, Peter Gleick, director of the Center for Science and Democracy at the Pacific Institute in Oakland, Calif., made a prediction that may have ultimately come true. In his speech, he predicted that water conservation would be at the top of the global agenda by 2020. We might have come close, but years passed without much of a dent in the water squandered daily by just about everyone. It was the drought that the planet hadn’t seen in a millennium that finally thrust water conservation into the public consciousness.
